Oaty Banana Bread - GF, DF

The only recipe you'll need!

I know that 18 months into this worldwide Covid-19 pandemic many people are totally over banana bread and never want to bake another loaf ever again. Fair.

But bear with me, because this recipe is honestly the only one you'll need.

I've gone on a little rant before about some of the gluten-free, dairy-free recipes that are floating around the internet. Now I have another thing I need to rant about. And it still has to do with nuts! In this case, almond flour.

I get it! Almond flour can be used in A LOT of baking to make yummy treats. And I'm guessing that 10 years ago, when gluten-free all-purpose flour wasn't something you could easily pick-up, many folks will have made efforts to create recipes where you could swap our regular flour for almond meal.

But we've come a long way. Gluten-free all purpose flour is very easy to come by. Almost any and every grocery store I have come across sell it. So there is honestly no more need to make everything with almond flour.

I know that when it comes to "sugar free" baking (or rather refined sugar free baking), unfortunately you often then fall into the world of keto and paleo baking. I personally am trying to limit refined sugar, not all carbs. BIG DIFFERENCE! I am not interested in going keto, which means I am not okay with swapping out regular flour for almond flour in every recipe. I have nothing against healthy fats but I do have something against baked goods that get soggy within hours and won't hold their shape. Because too much oil or fat will eventually mean sogginess.

I honestly did not think that in this day and age, with so many recipe swirling around the internet, that I would have so much trouble finding simple recipes that are gluten-free, dairy-free and that don't use a ton of sugar. But I am! Which means I am now taking all of my family's go-to recipes and transforming them into healthier versions without gluten or dairy.

Which is why I am featuring a banana bread recipe.

Because despite what I thought, the world needs at least once more.

Gluten-free, Dairy-free, Refined sugar-free

Makes: 12 muffins or one loaf


  • 1 cup all-purpose gluten-free flour

  • 2/3 cup oat flour

  • 1 tsp baking powder

  • 1 tsp baking soda

  • 1 tsp mixed spice

  • 3 ripe bananas, mashed

  • 1/3 cup butter or vegan alternative (for dairy free), room temperature

  • 1/3 cup monkfruit sugar substitute or sweetner of choice

  • 1 egg


  • In a large bowl, cream together the butter and sugar substitute.

  • Beat in the egg until well combined.

  • Mix all dry ingredients in a second bowl.

  • Mash together bananas in a third bowl.

  • Alternate adding dry the ingredients and the mashed bananas to the butter mixture until well combined.

  • Optional: Add chocolate chips or nuts, such as walnuts, at this stage if desired. Fold in the ingredients until well combined.

  • Scoop into greased muffins tins or loaf pan.

  • Bake at 350°F for 45-50 minutes for a loaf, or 20-25 minutes for muffins.
